HOW TO PREPARE
Blend 3 tablespoons of flour and salt.
Dip the eggplant into this blend and set aside on a platter for later.
In a fairly large frying pan, pour oil and two tablespoons of butter and saut eggplant pieces for just about three minutes or up until the desired texture of the eggplant is attained.
Take a serving plates and arrange the pan-fried eggplant with overlapping skin parts.
Set aside without allowing it to cool too much.
On same pan, add remaining butter and saute the onions and chicken liver until cooked and browned. This will likely take no more than 6 minutes to cook.
Add remaining flour and sprinkle with crumbled basil leaf.
Add broth and let cook further.
Keep over medium heat until your mixture thickens. This will take around one minute.
Add your tomatoes and cover the pan.
Lower heat and let it to simmer for around 5 minutes.
For serving, spoon the mix in the middle of the plated eggplants and you are now ready to dig in.
